Olivesolutions Project: Innovative biological and technological solutions to improve quality, food safety and the use of effluents in table olive processing companies.

This project involves developing new starter cultures for table olive production, studying the functional potential of exopolysaccharides (EPS) produced by different microbial strains isolated from table olives, and implementing the Sentinel system in the management of traceability, quality and safety in food production processes.
